Salad.
That bland thing you eat, not because you want to, but because you have to.
If you know me at all you'll know that I am an unlikely champion of salad. I'm much more likely to opt for a steak than a salad. It just isn't something I would normally default to.
I'm sure that you are the same.
But here are the facts:
Vegetables are delicious - If you don't believe this, you've not been preparing them right. The variety in nature and the possibilities are so exciting. There's something for everyone.
Vegetables are full of goodness - We need more veggies in our lives. People that eat more veggies, in general, live longer. Vegetables are full of fibre - which feeds your microbiome. Gut health is so important.
Vegetables are eco friendly - By now we are all well aware that vegetables have much less of an impact on the environment than animal-based or processed foods. As time goes by it is clear quite how important this consideration is.

I've got a scary announcement.
I'm going to write a book about Salads.
...and I am going to do it in the open - for all to see.
I'm not talking about throwing the baby out with the bathwater here. Meat, fish, cheese, etc will still feature - but as more of a seasoning than the main event. Heck, this is the Japanese way - and those guys live a long time.
This book is not going to be a book of recipes for finished salads. No.
It's going to be a book of elements.
You'll pick the elements you're excited about. You'll prepare them. You'll store them in your fridge. You'll freestyle your own salads from the amazing elements you have prepared.
Together, we're going to make salads great again.
